Personally, I don't see any of the monsters as being remade, so much as reinterpreted. I know I have specific ways that i see/ want various creatures to act and to me it's more people putting them the way they want them in their work. My best way of explaining this would be vampires. There are a bunch of general rules that vampires have to follow, but everyone interprets them differently (for example, in the Buffyverse, they burst into flame when they go in the sunlight, in Blade they get a bad sun burn and in Twilight they sparkle) and some people like certain rules and others don't and do away with them (you hardly ever come against the issue of not being able to cross running water any more). It's all just a manner of personal preference.

I would love to see a made over Frankenstein, I guess Herman Munster was pretty close but that was 30 years or more ago.. maybe a little more hip and fashionable. Maybe drive a special made BMW hearse with Metallica blaring from the Satellite Radio. Perhaps he could spend a fortune on having his scars surgically enhanced by a Hollywood Plastic surgeon and then go psycho when he doesn't like the results.. hehe.
I liked the Jigsaw/Bush analogy...you are not too far off there, IMHO. Saw is being run into the ground just like other horror franchises, I get ill just thinking about where they will take it and ultimately ruin the original concept.
On a sidenote I am looking forward to the Wolfman remake, out of curiousity if nothing else.
